CAS is our new cake decorating certificate, designed especially for the beginner. Please note this Diploma is all about Cake Decoration and Sugarcraft, it does not include baking and students would be expected to bake their own bases required for lesson. Students wishing to be taught baking would need to enquire about specialist 1.2.1 tuition. Due to the interest we have received from students wanting to learn the foundations of cake decorating but without the expensive formal qualification, our head of school, senior lecturer, international judge and cake artist Lynda Gilbey, winner of ‘best college’ consecutively at Cake International, has written four modules covering all areas associated within the world of cake decorating and sugarcraft. You can be assured to receive excellent tuition to the highest standard. Lynda has been a senior tutor within the college network for over 25 years, teaching accredited qualifications including City and Guilds, UCLI, CENTRA and ABC AWARDS. Her knowledge and highly qualified background have enabled her to write tutorials for leading Cake Decorating and Sugarcraft magazines opening up her expertise’s to many more than the numerous students who have had the privilege to be taught by her over the past 30 years. This is the Second of the four modules which we are offering at a very competitive price. The art of making sugar flowers can be expensive as many cutters and tools are required, however once purchased and if looked after they are a valued addition to your cake decorating kit. We have covered the basic of all flower making and have chosen classic flowers which will be used on wedding cakes and celebration cakes regularly.
The Flowers produced in these lessons will not be botanically correct but pleasing to the eye. The art of making botanically correct Sugar Flowers can take many hours and are not commercially viable for today’s cake designs, therefore our approach is to make a flower simply, still ensuring a professional finish but requiring less labour time. Producing a beautiful artistic finish and costed at a more realistic figure ensures more commissions. Each lesson I will be demonstrating and explaining a wide variety of techniques however this course hopes to develop your skills to personalise your own designs.
Creating sugar Flowers captures the imagination of most cake decorators and with so many to choose from it can be difficult to know which one to try first The Flowers selected for this module have been carefully chosen so they meet the needs of most cake decorators and can be adapted to a variety of specimens which can then be perfected by beginners, enthusiasts, professionals and hobbyists alike

This is our 2nd Module and covers the art of sugar Flower making over a 9-week course (26+hours), consisting of roughly 2.5 hours per class.
